It’s ages since I’ve cooked either orzotto or risotto. For those who don’t know the difference orzotti (plural) are a speciality of the Friuli Venezia Giulia region of NE Italy, that includes the beautiful city of Trieste, where pearl barley is used instead of aborio rice. Continue reading
