In time for Christmas! Phew…
OK, there was one too many pan-fried veg on my plate for lunch, as in the parsnips (even though I only ate one medium potato and parsnip). Yesterday I mashed the parsnips with carrots and their texture worked far better. So, that’s the route I’m hoping to go with on Christmas Day itself. Especially as it’s very doubtful I would manage to find fresh duck on Christmas Eve as I’d hoped. Although, I’m not long back from both supermarkets and the other one is well stocked with fruit and veg at least. However, trying to find fresh meats on Monday will be tough. Bacon, as long as I don’t open the pack, will be safe to cook Christmas Eve so I should be able to buy that tomorrow. It’s not the end of the world (hangs head in utter shame!) if I have to eat what’s in the photo above as it’s full of flavour and has lots of vegetables. I absolutely LOVE brussels sprouts! Actually, I love veggies in general and this plate of veggie goodness looks delicious! I love those gold brown colors you got there… Yum….
I’m with you on both Brussels sprouts and veg in general (ooops, apart from celeraiac!). If I have to make do with that plateful on Christmas Day I won’t be disappointed!

That looks delicious! I love Brussels sprouts, especially with chestnuts and bacon, and I agree with your previous comment, boiled Brussels sprouts lose all their interest if boiled (I guess I could accept parboiled if they were panfried afterwards).
Yes, parboiled would be OK. I do prefer them pan-fried over lowish heat until nicely golden. They always turn out so sweet! Perfect with bacon and chestnuts.

Recipe is fairly trad and kinda simple, yet it’s very tasty. Mine turned out deliciously well on Christmas Day itself. Hoping you and yours had a great time, too.

Absolutely the same with me. Going with a fairly traditional lunch tomorrow with poached chicken (it’s too mild here to roast anything). There was virtually nothing left this afternoon in either of the supermarkets. Couldn’t even find venison sausages!
The sprouts look scrumptious. Aren’t they grand? And yes, boiled is not the way to go. But they are amazing when carmelized just a bit….
